The best potato salad you'll ever taste! A great combination of smoky Herta frankfurters, potatoes and apples dressed in a light lemon dressing.
Preparation time: 15 minutes

For the dressing: 6 tbsp good olive oil 1 lemon finely grated, zest and juice of half 1 tbsp white wine vinegar a few large sprigs freshly chopped basil freshly ground black pepper
675g (1½ lb) new potatoes, cut into chunks 350g pack Herta Frankfurters Classics, chopped 4 spring onions, finely chopped 2 dessert apples, finely sliced

Cook the potatoes in boiling water for 15-20 minutes until tender. Drain and allow to cool.
Whisk the dressing ingredients together with a fork in a small jug.
Warm a few glugs of the dressing in a small pan and toss in the frankfurters. Heat until the frankfurters are cooked through. Transfer to a large serving bowl. Toss in the potatoes, spring onions and apple then finish with the remaining dressing.
